Named after John McAdam, the chemist who first cultivated the macadamia tree, these nuts were not produced as a crop until the mid-1800s. Since then the demand for macadamias has grown exponentially making them one of today's most expensive nut crops.

At harvest, these nuts still contain up to 30% moisture and are dried to reduce moisture content to about 1.5%. Drying also shrinks the nut kernel away from the inside of the shell to allow the shells to be cracked without causing damage to the nut.
