These are one of my mine and I’ve made them often for myself, friends, family and co-workers. They’re always received with enthusiasm.
Careful when you start sharing them though, you’ll be asked to make more!
Banana Walnut Chocolate Chip Muffins
- 1½ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 3 ripe bananas, mashed
- 1 egg, lightly beaten
- ½ cup whole brown sugar, or palm sugar
- ¼ cup melted butter
- 1 tsp vanilla extract
- ½ cup dark chocolate chips
- ½ cup raw walnuts
Preheat your oven to 350°F.
Mix the first four ingredients together.
In another bowl mix together the bananas, egg, sugar, butter and vanilla extract. Once that is well combined, add the walnuts and chocolate chips.
Stir the banana mixture into the flour mixture until just combined.
Spoon your batter into a prepared muffin tray. Bake in the preheated oven for 18-20 minutes, until a toothpick inserted into the centre of the muffin comes out clean, careful not to over-bake!
This recipe will make six large muffins, or 12 small.
