Need a high-fibre, high-protein, delicious chocolate treat that the kids will love? Well, chia pudding is an easy dessert/snack/breakfast that even the kids can make!
Chia seeds are so strange! When you put them in liquid, they absorb it all and turn into a gel-like consistency.
Despite their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fibre, protein, omega-3 fatty acids and various micro-nutrients.
PLUS: They meld perfectly with chocolate.
Chia pudding is a great high-protein snack for post-workout, or makes for a great breakfast on-the-run. It keeps in the fridge well for about three days, and it freezes really well too!
My son Cyrus loves making chia pudding. He is a total chocoholic, and this recipe is so easy, he makes it all the time.
Chocolate Chia Pudding
- 2 mushy bananas (the riper the better!)
- 2 tbsp cacao powder or high-quality cocoa powder
- 2 tbsp of your favourite protein powder
- 1½ cups almond milk
- ½ cup organic chia seeds
- A couple of drops of stevia or a drizzle of honey (optional; I find it sweet enough without!)
Place all ingredients in a blender and blend until smooth. Refrigerate for 30 minutes, then serve. Serves six and stores in the fridge for three days or so.
