Brilliant performances by so many great musicians from BC, across Canada and the globe meant that we could forget the rain and get lost in the magic of the music.

Date Squares

DSC_0046B-sqGrowing up, date squares were a dessert my mother would always make.

While she’s a very talented cook, she never loved baking sweets.

The beauty of these squares is that they’re not nearly as finicky as many desserts, and the flexibility makes them great for those who may not love baking or are still learning.

Date squares have been around for many years, and for good reason!

Using Barhi dates instead of the traditional Deglet or Medjool gives this dish a whole new flavour.

These squares are fabulous on their own, with a dollop of whipping cream or a scoop of ice cream.

Nut Butter Freezer Fudge

DSC_0043B-sqI know we’ve shared this recipe before in our summer newsletter, but I feel it’s worth revisiting due to its popularity!

With only a few ingredients, no cooking skills needed (kid-friendly!) and never-ending variations, this recipe doesn’t get old.

We all crave sweets sometimes, so why not indulge in something you can feel good about having made yourself?

Not to mention nut and seed butters are packed with healthy nutrients your body loves, and your taste buds will as well.

So dig in, have a bite (or more) and don’t feel guilty, we all deserve some sweetness in our lives.

Wild Rice and Cashew Salad

After trying this recipe for the first time I was hooked.

I usually make large batches, as it keeps well refrigerated, making it perfect for gatherings, potlucks.

Triple Citrus Electrolyte Drink

DSC_0134B-533x841-sqWith the beautiful spring weather having arrived, many are taking full advantage, spending time outdoors and active. It’s important when you’re active for more then a few hours to give your body something to keep it performing the best it can, and this drink is just the thing!

Chia seeds have received a lot of attention in the last few years, and for good reason. They’re packed full of many beneficial components for our bodies. They’re very high in dietary fibre, good fats, antioxidants, calcium, phosphorus, magnesium and manganese, while also being a good source of protein and a number of other minerals.

This drink is simple to make and delicious to drink. Keep a batch in your fridge so it’s convenient to grab for when you’re running out the door!

Dukkah

DSC_0277R-sqThis crunchy, flavourful mixture can be used in many different ways.

Traditionally an Egyptian condiment served with bread and olive oil for dipping, it’s also great for sprinkling on salads, baking with roasted veggies and meats, or alternatively, try stirring some into hummus.

One of my favourite ways to have some when I’m hungry and don’t have a lot of time to make a light meal is toasting a piece of bread, mashing half an avocado onto it and sprinkling on a generous amount of dukkah.
