Banana & Blueberry Almond Flour Muffins

Recipe makes 12 muffins.

Ingredients:

2 ripe bananas , mashed
2 tbsp chia seeds
3 eggs
2 tsp pure vanilla extract
1/2 cup brown, or palm sugar
3 cups almond flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
3/4 cup fresh or frozen blueberries

Directions:

Pre heat oven to 350 f.

Add mashed bananas, chia seeds, eggs, vanilla and sugar to a bowl, mix until totally combined. To the same bowl add all remaining ingredients except blueberries. Stir until all ingredients are fully combined, then add the blueberries and fold them in, or gently stir.

Either well oil your muffin tray, or using a muffin liner put 1/4 cup of batter into each cup.

Bake for 25 minutes.
