1 ½ cups unsweetened pineapple juice
1 tsp vanilla
2 cups mixed roasted, unsalted nuts (Brazil nuts, hazel nuts, almonds, pecans, walnuts etc.)
2 cups flour (unbleached white or your choice)
1 tsp baking powder
1 cup soft dates dates (medjool or barhi)
2 cups raisins
3 cups mixed dried pineapple, mango and papaya
1 cup dried cranberries
6 tsp egg replacer dissolved in 4 Tbsp water (could use eggs)
½ cup maple syrup
½ tsp allspice
1 tsp cinnamon
Mix together juice, vanilla, dates, raisins, dried fruit and cranberries. Stand to soak for a minimum of 1 hour. Add ingredients together in the order given. Mix well. Divide dough into two 9 inch pans or square, lightly greased glass dishes or three bread pans. Bake at 350 degrees for approx. 45 minutes or until golden brown. Do not over bake. Remove from oven and allow to cool before removing from pans
