Description:

This is a fantastic snack to take when you're exercising and you need that little energy boost to keep you going! Tested on an 8 day hike this summer!

Ingredients:

Wet:
⅔ c cashew butter
⅓ c tahini
¾ c dates
½ c water
1 c rice flour
2 tbsp honey

Dry:
1 c dried cranberries
½ c candied orange peel pieces
1 c almonds
1 c cashew pieces
¾ c dessicated coconut
½ c pumpkin seeds
½ c sunflower seeds
1/3 c sesame seeds
1/3 c flax seeds
Pinch of salt

Directions:

Put almonds in blender or food processor and process until roughly chopped.

Combine all dry ingredients in large bowl.

Meanwhile, soak dates in 1/2 cup of water for 15 minutes. Blend until smooth to make a date puree.

Combine date puree with other wet ingredients in a separate bowl.

Add wet ingredients to dry ingredients and stir through.

Use hands to shape mix into balls and place in a container with lid.

Store in a cool place or in the refrigerator.

OPTIONAL: Bake energy balls for 10 minutes at 350*F. This gives them a richer, nuttier flavour.

VARIATIONS: Add chocolate chips, or substitute your favourite dried fruits or nuts.
