2 tbsp. honey, raw
1/4 tsp salt
1/2 tsp vanilla extract
1/2 cup shredded coconut
1 cup walnuts – (I use pecans)
Using a food processor with a metal S blade, process nuts until they are a coarse meal – but not so fine that they turn into a paste. Add to the rest of the ingredients and pulse until everything begins to stick together.
Roll small amounts of the dough into balls and then flatten, we like using a fork for the pattern. Put the cookies on a baking mat or parchment paper and into the freezer. Once fully frozen transfer to airtight containers for storage.
Eat frozen—a cool, delicious and nutritious snack. They disappear quickly!
