2 cups Walnuts, raw 2½ cups Whole Dried Bananas, chopped or snipped into cubes 6 Medjool Dates, pitted 4 tbsp Chia or Sesame Seeds 1-2 tbsp of Maple Syrup
1½+ tsp Cinnamon, ground ½ tsp Cloves, ground (optional) ¼ tsp Nutmeg, ground ½ Vanilla Bean, scraped or 1tsp Vanilla Extract, pure ½ tsp Sea Salt, flake (to taste)
Makes 12 energy bars.
In a food processor, combine all the ingredients. Start with 1 tbsp maple syrup and add more if needed. Process until the mixture is well combined and forms a sticky dough, occasionally scraping down the sides of the bowl.
Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
Transfer the mixture to the prepared pan and press it down firmly and evenly with a spatula.
Refrigerate for at least 1 hour until firm or for a quicker set, freeze them for about 30 minutes.
Once firm, lift the bars out of the pan using the parchment paper. Slice into 12 bars and store refrigerated in an airtight container for up to 2 weeks.
