This super easy to make and better for you fudge is great after dinner dessert.
1/2 cup nut butter of your choice
1/4 cup coconut oil
1-3 tbsp (or to taste) liquid sweetener (honey, maple syrup etc)
1/4 cup cacao powder (option if you want to make a chocolate fudge)
1/2 tsp vanilla extract
Pinch of sea salt
Toppings if desired (coconut, sliced almonds, chocolate chips, walnuts, pecans etc.)
Combine all the ingredients in a food processor or by hand, tasting often to adjust sweetness. If you like chunks, you can also add in nuts or chocolate chips.
Scoop your mixture into a parchment-lined container or silicon mould (the size of your container will determine how thick your fudge is).
Add toppings and place in freezer for an hour, or until firm. Remove from the freezer and separate from parchment paper or mould. Cut into little squares and return to the freezer until ready to eat.
Because of the coconut oil these can melt at room temperature. If you prefer a softer fudge, remove from freezer 5-15 minutes before devouring!
