Bite Size Fruit Balls

This recipe is a great hiking or on the go sweet healthy snack.

Ingredients:

1/2 cup dried cranberries
1/2 cup baker's fruit medley
1/2 cup raisins
1/3 cup coconut
2 tbsp honey
2 tbsp orange juice concentrate
1/2 cup finely chopped almonds

Directions:

In food processor chop together cranberries, baker's fruit medley, raisins and coconut just until combined. Add honey, orange juice concentrate (not diluted) and finely chopped almonds. Pulse until mixture clumps together. Roll heaping teaspoons into a ball. (Squeeze the mixture tightly to make a firm ball.)
Store in fridge.
Makes 16 fruit balls.
