3/4 cup raw cashews
2 cloves of garlic
1 cup packed fresh mint and
1 cup packed fresh flat-leaf parsley
1/2 cup olive oil
salt and pepper to taste
In food processor, pulse nuts and garlic until coarsely ground. Add mint, parsley and salt and pepper, pulse 6 to 10 times. With motor running, add oil in a steady stream until smooth.
