An easy dish to prepare ahead of time and finish just before serving.
1 cup water
1/2 cup cashews or almonds
1 tbsp nutritional yeast flakes
2 tsp salt
1/2 cup sesame seeds
2 tbsp olive oil
1 cup cornmeal mush*
4 cloves garlic
2 tbsp lemon juice
1 tsp basil
Blend nuts in a little water until smooth. Add remaining ingredients except for sesame seeds and basil. Blend well. Briefly whiz in sesame seeds and basil. Spread thickly on bread and broil until crusty and golden.
* To make cornmeal mush place 1/2 cup of corn meal in a saucepan with 1 cup water. Turn stove onto medium heat and cook stirring regularly for 5-7 minutes, or until thick.
