Rancho’s Recipe Tips:

This is a great hot-weather salad! It keeps well in the fridge for a few days and scales up easily, so you can make it a day in advance for events or meal prep. We also enjoy adding cooked chickpeas or air-frying or BBQing tofu chunks to top it with for additional protein.

Ingredients:

Makes 4 dinner-sized portions.

 

Salad Base:

  • 250g Rice Noodles, medium sized*Β 
  • 1 Bell Pepper, thinly sliced
  • 1-2 cups Cabbage, thinly sliced
  • 1 cup Carrots, shredded
  • 1 cup Edamame, shelledΒ 
  • 2 Green Onions, thinly sliced
  • 1/4 cup Sesame Seeds, toasted
  • 1/4 cup or a handful of Parsley and/or Cilantro, chopped

* We like using pad thai or stir-fry size rice noodles, but if you don’t have any on hand, we’ve also made this salad with regular spaghetti noodles, and it’s still delicious! We’ve really enjoyed this salad with a variety of different noodles.

 

Dressing:Β 

  • 2/3 cup Soy Sauce
  • 1/3 cup Rice Vinegar
  • 1/3 cup Olive Oil
  • 1/4 cup Tahini, Cashew Butter, Almond Butter, or Peanut Butter
  • 1 Tbsp Toasted Sesame Oil
  • 1 Tbsp Palm or Brown Sugar
  • 1 Tbsp Ginger, fresh grated, or 1 tsp dried and ground
  • 1 Garlic Clove, finely minced or pressed or 1 tsp Garlic Powder
  • Juice + Zest from 1/2 Lemon or Lime
  • Fresh cracked pepper

 

Toppings:

  • 1/2 cup Sesame Seeds, toasted
  • 1 cup Cashews, roasted, salted, or flavouredΒ 

Directions:

Cook the noodles in salted water according to the package instructions, aiming for al dente rather than well done. Strain and rinse with cold water. Toss with a drizzle of olive oil and place the noodles in a large bowl in the fridge to cool further while you prepare the remaining ingredients.

Whisk the dressing ingredients together until combined.

Add about 1/4 of the dressing to the noodles, and toss so they’re fully coated. Then add the remaining salad base ingredients and the rest of the dressing, and toss to combine.

When serving, top with more sesame seeds and a handful of roasted cashews. Our favourites are the chili or salt and pepper cashews!
