Antioxidant Winter Salad

This salad is satisfyingly crunchy and sweet tasting. All raw, all fresh, just what you need for a perfect winter salad!
1 cup grated green cabbage
1 cup grated red cabbage
1 cup grated beet
1 cup grated carrot
1 & 1/2 cups Rancho’s Breakfast Mix or Rancho’s Super Antioxidant Mix
Mix all ingredients together, et voila! all done.
Cottage cheese is all the dressing this salad needs. Serve with a heaping tablespoonful of cottage cheese folded in.
Ranchoäó»s Antioxidant Winter Salad keeps well for a few days in the refrigerator in a covered container. This salad tastes even better the next day, as the nuts seeds and dried fruit have soaked and absorbed the beautiful flavours of the juices from the grated veggies.
This will yield about 5.5 cups of delicious winter salad.
