1/2 cup cashews, raw or roasted
1/2 cup medjool or barhi dates, pitted
2 1/2 cups dark chocolate, meltedbmx
Pinch of salt (if using unsalted cashews)
Put cashews in a blender and add just enough water to cover them. Blend into a thick cream, continuously scraping down the sides of the blender. If cream is too thick, add a small amount of water to aid in blending. Add dates and blend again until smooth. Add melted chocolate, plus a pinch of salt if necessary, and blend until thoroughly combined.
Pour into 9-inch square pan lined with parchment paper and chill for an hour in the freezer. Cut into 1-inch squares. Enjoy as is, or dip in melted chocolate and let set.
