1 cup Pumpkin Seeds – lightly pan toasted without oil
1 Jalapeno cut in half
1-2 Shallots
1 Tbsp of sliced garlic
1/2 cup Fresh cilantro
1/2 cup Fresh parlsey
1 tsp Orange zest
1 – 1.5 Tbsp Olive Oil
1 Lime
salt & pepper


As with many dips, the ingredient quantities will vary, start with less and add more as required.

Saute the jalapeno, shallots, and garlic in olive oil, and add to a food processor with the lightly toasted pumpkin seeds, ciltantro, parsley, olive oil, juice from 1/2 the lime, salt and pepper.  Pulse to blend everything together.  Check to see if it needs more moisture and add more oil or lime.  Continue to blend until it reached desired consistency.
