Cashew Parsley Dip and Spread
- 1 cup raw cashews
- ¼ cup olive oil
- 1½ cup fresh parsley leaves, packed
- 1 clove garlic
- 1 tbsp lemon juice
- salt and pepper to taste, approx. ¼ tsp each
Add the garlic to your food processor and pulse a few times; add the rest of the ingredients and blend until you reach your desired consistency.
