Cashew Parsley Dip and Spread

This recipe is one we often love to share as a demo at our Harvest Events.

Due to how popular it’s been, we wanted to make sure everyone got a chance to make it!

Anything we use for demos has to be simple and taste great. You also need to be able to make a batch in just a few minutes.

This recipe fits the bill, and we hope you try making this dip or spread. You won’t be disappointed!

Cashew Parsley Dip and Spread

  • 1 cup raw cashews
  • ¼ cup olive oil
  • 1½ cup fresh parsley leaves, packed
  • 1 clove garlic
  • 1 tbsp lemon juice
  • salt and pepper to taste, approx. ¼ tsp each

Add the garlic to your food processor and pulse a few times; add the rest of the ingredients and blend until you reach your desired consistency.
