Green Bean Salad

DSC_0297-sqI’m a believer in eating a variety of different salads year-round. Aside from the benefits of eating a wider range of vitamins, minerals and other essential nutrients for your body, it also keeps you from getting bored with your meals.

I really enjoy how the flavours come together with the ingredients in this salad and find it a tasty addition to many different main dishes. While I like the beans whole, some people may find them easier to eat if they’re chopped into one- to three-inch pieces after blanching.

But the people of Airdrie really identify themselves through their love of community and their welcoming spirit. Which they need! Airdrie is one of the fastest-growing cities in Canada!

It’s easy to see why Airdrie is growing so quickly, what with the proximity to Calgary and transportation improving in the area all the time, why wouldn’t you want to live in a small, comfortable community just outside the big city!

Bringing the harvest to communities near you across Alberta and BC

IMG_0507-sqOur roots in Alberta are deep. The Vignolas have been travelling to the Camrose area for more than 30 years to sell their fresh-crop products.

With the support of many communities, Rancho Vignola’s once-a-year events grew out of their humble beginnings and into the Camrose Regional Exhibition which has hosted our events for the past 13 years or so.

We always get a warm welcome from the crew at the CRE. They are always happy to see us and help us get set up for our big event.

Chicken Crusted with Almond and Flax

DSC_0028-copy-sqRichard Potvin has shared his great recipe for an alternative to traditional breadcrumb-crusted chicken. It’s flavourful, moist and by using a variety of ingredients offers a larger range of nutritional benefits compared to breaded chicken.

For those who follow a gluten-free diet, or cook for someone who does, this recipe is naturally gluten-free without sacrificing flavour (actually you’re adding lots!). It’s also great for anyone looking to lower the amount of grains they’re eating but looking for a comfort-food favourite with a twist.

Bringing the harvest to communities near you: Vernon and Penticton

Since 1998, Rancho Vignola has been setting up an event in Vernon, BC, their home base, at various halls in the community.

For the past five years, Rancho has been at the Vernon Recreation Centre Auditorium, where we can really spread out and give our customers the optimum experience.

Almond Coconut Joy Bars

These delicious treats require no baking!

They are very easy to whip up and you won’t be able to keep them in stock.

Chewy with a nice crunchy snap, these “energy bars” are packed full of protein. They’re also gluten-free, lactose-free and suitable for vegan, vegetarian and pescetarian diets.

This recipe contains no refined sugar or oil and is made with only a few simple ingredients, all natural whole foods that are good for you!

Blackberry Chia Jam

DSC_0337R-sqMany people I know stay away from making jams, but it doesn’t have to be a daunting task!

This recipe is flexible, easy and fast, doesn’t require purchasing any pectin or thickener, and no need to figure out how to can, as it can be easily kept in the freezer and thawed as needed.

You can make large batches, or try adding in some other fruit (blackberry and blueberry anyone?). The possibilities are endless.

Hazelnuts, also commonly known as filberts, are produced by the hazel tree.

People have been cultivating hazelnuts for approximately 9,000 years.

Hazelnuts are now grown all over the world, with Turkey being the largest producer by a large margin, followed by Italy and the USA.

We source our nuts from a lesser-known area for hazelnut production: the Fraser Valley of BC, Canada.
