Welcome, November! 

The Rancho Vignola warehouse in Armstrong, BC has been receiving product throughout October and now we are getting ready to ship! Our shipping department is bustling, the packaging room is starting to slow down after packaging so much product, the Gourmet Gifts department is finishing up making beautiful gifts for the holiday season and our office is busy contacting customers for shipping!

We start our Annual Harvest Events this Friday and Saturday in Vernon and Penticton. Yes, Penticton gets to experience their First Annual Harvest Event and we hope lots of people can make it out to try the “Best of the New Crop.”

Stuffed Winter Squash

If you haven’t yet familiarized yourself with stuffed squash, it’s time to do so! It’s warm, filling and packed with delicious flavours and textures. Great on a cool fall or winter evening, this recipe is sure to warm you up and satisfy your taste buds!

Stuffed Winter Squash

  • 1 large or 2 small winter squash, halved and inside scraped clean
  • salt and pepper
  • 1 ½ tbsp + ½ tsp olive oil
  • 1 cup quinoa
  • 13 cup sunflower seeds
  • 13 cup sliced almonds
  • 1 small onion, chopped
  • ½ tbsp dried thyme
  • 1 tbsp dried parsley
  • 1 clove garlic, minced
  • ½ cup parmesan grated

Michelle’s Zesty Garbanzo Beans with Pistachio Nuts

Our friend, co-worker and local food advocate, Michelle Tsutsumi, joined the team at the Rancho Kitchen to make yet another delicious recipe to share with everyone. This recipe, zesty garbanzo beans with pistachios, is simple and satisfying. Michelle recommends serving it with a bold red meat, grilled tofu, or cooled down atop a bed of salad greens.

Sesame Snack Bars

Fall is fast approaching, the weather is starting to change and summer farmer’s markets will be closed before we know it. Not to mention the new school year is just around the corner.

As many people are now getting busier, including us at Rancho Vignola, it gets more tempting to buy quick snacks from the grocery or health food store that might not be so great for us.

These very tasty bars are quick and easy to make, you can throw them in the freezer and take them out as needed. Kids love them (as do adults) and they’re a great way to get seeds and nuts into your family’s diet.

Honey Roasted Walnuts: a sweet treat or salad addition

DSC_0025--sqWith the current popularity of candied pecans, I have found walnuts to be often overlooked as a wonderful alternative. Walnuts have the highest amount of omega-3 fatty acids in comparison to other nuts and are very high in antioxidants, protein, fibre, magnesium, phosphorous and many other important nutrients.

As a walnut lover (fresh-crop only!), I find myself often looking for ways to incorporate these tasty and nutritious nuts into more of my meals. Living in the Okanagan in the heat of summer, I find myself eating lots of salads and love a bit of crunch on them, thus bringing me to start experimenting in the kitchen with walnuts. This recipe is the result of my experiments.

Rancho’s Coco Maple Granola ~ tried, tested and true!

This recipe for Rancho’s Coco Maple Granola is totally flexible. Feel free to play around with your own combinations of dried fruit, nuts and seeds.

Besides breakfast and/or snacks, take this granola hiking, camping or backpacking. It’s lightweight, high in calories and easy to store, similar to trail mix and muesli.

Try it in combination with yogurt, honey, strawberries, bananas, dairy milk, almond or soya milk, blueberries and/or other forms of cereal. It can also serve as a topping for various types of pastries and/or desserts. Granola is great for improving digestion!

Snacking: The good, the bad and the HEALTHY!

We are programmed throughout our lives to think that three meals a day is the norm and we don’t need any more or less than that. But realistically, many of us like to snack between meals, or sometimes snack INSTEAD of meals. We shouldn’t shame ourselves for such actions, we are actually doing our body good by providing it with a consistent supply of food, fuelling our metabolism to keep us cruising through our busy lives. It is more about the type of fuel we decide to snack on that makes all the difference.

Citrus Berry Iced Green Tea

With the hot Okanagan summer looming before us, a recipe for a light, refreshing beverage is good to have on hand. This recipe is simple, very refreshing and lovely to sip on a hot afternoon. Golden Incan berries.

Golden Inca berries have many other names. They are sometimes called ground cherries, bladder berries, winter berries, cape gooseberries ~ phew, these little guys get around! I have often seen the ripe Inca berries used as a garnish in restaurants. They taste quite sweet when they are fresh and slightly more citrus-flavoured when dried. They blend very nicely with honey-sweetened green iced tea, and these precious little jewels contain vitamin B12 and protein! This is rare for the fruit/veggie world, which is one reason why I think they are so special.
