Great for dipping veggies in and as a spread for toast, sandwiches and crackers.
1 cup raw cashews
1/4 cup olive oil
1 1/2 cup fresh parsley leaves, packed
1 clove garlic
1 tbsp lemon juice
salt and pepper to taste, approx 1/4 tsp each
Add the garlic to your food processor and pulse a few times, add the rest of the ingredients and blend until you reach your desired consistency.
