Description:

A great snack for everyone you can pull out of the freezer ahead of time.

Ingredients:

2 Β½ cups Puffed rice cereal
1 ΒΌ cups Oats
1 cup Mixed dried fruit, chopped (apricots, dates, raisins, apples, cranberries, etc.)
1 cup Peanuts, chopped
ΒΎ cup Whole brown sugar, packed
ΒΎ cup Peanut butter
ΒΎ cup Liquid honey
Β½ cup Cacao powder

13 x 9 inch (3.5 L) cake pan, lined with foil and greased

Directions:

Combine first four ingredients in large bowl. Heat brown sugar, peanut butter and honey in small saucepan over low heat, stirring until melted and smooth. Stir in cocoa powder. Pour over dry ingredients. Mix well. Press firmly into prepared pan. Refrigerate until set, about 1 hour. Remove from pan and peel off foil. Cut into bars.

VARIATION: Use a combination of fruits or one type only if you have a favorite.

TIP: Mix thoroughly so all dry ingredients are moistened. Mixture will seem a bit crumbly before pressing into pan.

Prep time: 15 minutes
Refrigeration time: 1 hour
Freezing: excellent

Makes about 3 dozen bars.

  1. Hi, nice combination, but found it a little too sweet. The dried fruit adds a lot of sweetness without all the brown sugar and honey. Any suggestions for reducing the sugar and having it still stick together well?

    • Hi Bob. I think you could reduce the amount of brown sugar a bit without negatively affecting how the bars stick together. However, as it isn’t our own in-house developed recipe, and it was kindly shared with us by a customer, we haven’t done as extensive testing with variations such as reducing the sweetness. Please let us know if you have success making it a bit less sweet or any other changes you make!
