Ingredients:

  • 2 cups Cashews, raw, whole
  • 1/4 cup Sweet Chili Sauce
  • 2 tsp Fresh Ginger, grated*
  • 1/4 cup Sesame Seeds, raw

 

* If you don’t have fresh ginger at home, you can substitute with ½ tsp of dried ground ginger. Or omit the ginger entirely if it’s not a flavour you enjoy.

Directions:

Makes 2 cups roasted cashews

Preheat your oven to 350°F.

Line a baking tray with a silicone mat or parchment paper.

In a bowl, combine the cashews, sweet chili sauce, and freshly grated ginger. Stir until the cashews are evenly coated.
 Spread the mixture in a single layer on the baking sheet and bake for 15 minutes.
Remove from the oven, sprinkle with the sesame seeds, and stir to distribute. Spread the cashews back into a single layer, return to the oven, and bake for another 10 to 20 minutes, or until golden brown.

Allow to fully cool to room temperature before breaking apart the cashews and transferring them to an airtight container.
