1 tbsp olive oil
1 med. onion, finely chopped
1/2 cup chopped, dried apricots
1 cup white rice
2 cups chicken or vegetable broth
1/4 cup sliced toasted almonds (you can also use slivered almonds, or chopped whole almonds)
Salt and pepper to taste
Sprinkle of parsley
Heat oil in a saucepan over medium heat; add onions and apricots and cook until onions are translucent.
Stir in rice and broth; cover and allow to cook 15-20 mins at medium temperature, until broth is absorbed.
Stir in almonds, parsley and season to taste.
