Ingredients:

  • 1⁄2 cup Pumpkin Seeds
  • 1⁄4 cup Sunflower Seeds
  • 2 Tbsp Sesame Seeds
  • 2 Tbsp Chia Seeds
  • 2 Tbsp Flax Seeds
  • 2 Tbsp Poppy Seeds
  • 1⁄2 cup packed Dried Apricots, chopped
  • 1⁄4 cup Cranberries, chopped
  • 1⁄4 cup Goji Berries
  • 1⁄4 cup Dried Mulberries
  • 1⁄4 cup Raisins

Date Paste

  • 1⁄2 cup (packed) Medjool Dates, pitted, chopped
  • 75 mL Hot Water
  • 1⁄4 cup Homemade Peanut Butter (or any 100% Nut Butter)
  • Pinch of Sea Salt

Directions:

Makes 12 Bars

Preheat the oven to 350°F.

Soften the Dates in 75 mL hot water and set aside.

In a large bowl, mix all Seeds and Dried Fruits.

To the Dates and Water, add the Nut Butter and mash into a smooth paste, using your hands or a mixer. Add the Date Paste to the Seed and Fruit mixture and stir until well combined.

Press the finished mixture firmly into molds, then turn out onto a parchment-lined baking sheet. Bake for 8 minutes on your oven’s convection setting.

Let cool completely and store in the fridge. The flavour and texture becomes more pronounced after a day.
