2 cups Nuts of your choice, raw or try our Raw Nut Mix
3 Tbsp Maple Syrup, darker syrup has a more pronounced flavour
1 tsp Vanilla Extract
½ tsp Cinnamon, ground
¼ tsp Nutmeg, ground
¼ tsp Cloves, ground or try: 1 tsp of Apple Pie Spice Blend, Pumpkin Pie Spice Blend, or English Mixed Spice Blend
â…› tsp Sea Salt
¼ cup Brown or Palm Sugar – reserve until the end
Makes about 2 cups Snacking Nuts
Preheat your oven to 300°F.
In a bowl, combine all ingredients except for the brown sugar; toss to coat the nuts evenly.
Line a rimmed baking sheet with parchment paper or a silicone mat. Spread the Nut mixture in a single layer, scraping any remaining syrup over top.
Bake for 15 minutes, stir well, then bake 10 minutes more. Stir again and bake another 5–10 minutes, until the Maple Syrup is bubbly and the Nuts are roasted. Check for doneness by removing a couple of nuts from different areas of the pan and cutting them open. They should be lightly browned on the inside. Roasting time varies slightly depending on the size of the nut and your preference for a lighter or darker roast.
As soon as you remove the nuts from the oven the last time, sprinkle the brown sugar over top, and mix everything to coat the nuts well.
Allow the nuts to fully cool to room temperature before transferring to an airtight container for storage.
